As I continue my Food Journey through Spring, I grabbed some pears and started thinking what to create next. Best way to think of how a food would fit into a recipe, is to bite right into it, release the aromatics!

Tasting an item isn’t just with your taste buds, listen to the crunch, breathe in the scent, use all your senses.…..if you are a Foodie, then you know what I’m talking about!

Unlike most fruits that ripen on trees, pears ripen better once picked and off the tree.  Pears are one of the oldest beloved fruits and were once considered “A Gift from the Gods!”

Let’s take this gift and incorporate it into some recipes!

 

Pear Salsa

1 Pear, cored & finely chopped

1 Apple, cored & finely chopped

2 Kiwifruit, peeled & finely chopped

1 can mandarin orange segments, cut in half, reserve juice

1 T. Honey

1 Lemon (1 wedge for juice), reserved lemon

Combine fruit together in a bowl. Pour honey and lemon juice over and stir to incorporate.

Cover and place in fridge until ready to serve.

Serve with tortillas,  graham crackers, spoon over yogurt, eat straight or as a side for lunch and dinner.

Speaking of Dinner………..

 

Poached Cod w/ Pear Salsa

6 ozs cod (or other white fish)

Reserved juice from mandarin oranges (pear salsa recipe)

Lemon wedge

Salt & Pepper

Lemon slices, garnish

Microgreens, garnish (not pictured)

Mix reserved mandarin juice with 1 tsp (or 1 wedge of lemon) and little water. Place in shallow pan or crock type of baking dish.

Place fish in juice, add a few grinds of pepper, sprinkle of salt and bake uncovered at 350° for 15 – 20 minutes.

Plate fish, Pear Salsa & garnish with Microgreens and slice of lemon.
