Mother’s Day is this Sunday, May 10th , what better way to show your Love, than Lunch on the Patio!

This is what I have in mind for my mom. Simple & Elegant & Always a Winner!

Classic Shrimp Cocktail served in a Martini Glass

 

Mix together:

1 C. Ketchup

2 – 3 Tbsp. Fresh Horseradish (start with 2 Tbsp., add more to your liking)

 

Iceberg Lettuce

Cooked XL Shrimp (peeled, deveined, tails on)

Lemon Wheel (Garnish)

Spanish Olives (Garnish)

 

Line Martini Glasses with outer lettuce leaves or shredded.

Spoon Cocktail Sauce into center to form a small pool.

Line glass rim with cooked shrimp.

Serve on a Cocktail Napkin or Cocktail Plate.

Chefs Note:

 

If buying precooked shrimp, remember they should be cooked a little longer, as they tend to be a bit rubbery.

Precooked frozen shrimp, are cooked and then flash frozen to appear larger to the consumers. This also holds true for raw frozen shrimp, once thawed they release water and shrink a bit, even more after cooking.

The larger product you buy, they tend to lose flavor/taste.

Many classifications for sizes: Small, Medium, Large, X-Large, Jumbo, Colossal.

I tend to stick to X-Large, which on average is 30pcs./pound.
