Under the Fork | Spotlight: Kale

I stumbled across a farmer’s market on one of my recent fishing trips up north.
I was surprised at the variety of vegetables they had to offer.
In one of the bins, I saw a word I did not recognize: Lacinato Kale.
Lacinato Kale is also known Dinosaur or Tuscan Kale (as I was accustomed to). Tuscan and other types of kale are great in salads, soups and baked for kale chips.
This plant is very hearty, as it’s a cool weather plant and can be found in local farmers markets later in the season. It’s also known as a cut-and-come crop (harvest the leaves, leave the root ball intact to regrow).
