{"id":1155,"date":"2014-10-03T12:32:44","date_gmt":"2014-10-03T17:32:44","guid":{"rendered":"http:\/\/www.thevalleyledger.com\/wordpress\/?p=1155"},"modified":"2014-10-03T19:17:52","modified_gmt":"2014-10-04T00:17:52","slug":"historic-hotel-bethlehem-partners-with-colony-meadery-for-fall-mead-dinner","status":"publish","type":"post","link":"https:\/\/www.thevalleyledger.com\/?p=1155","title":{"rendered":"HISTORIC HOTEL BETHLEHEM PARTNERS WITH COLONY MEADERY FOR FALL MEAD DINNER"},"content":{"rendered":"<p><strong>BETHLEHEM, PA \u2013 October 3, 2014<\/strong> \u2013 Historic Hotel Bethlehem will partner with the Lehigh Valley\u2019s first meadery, Colony Meadery in Allentown, for the hotel\u2019s first Mead Dinner on Wednesday, October 29 at 6:30 p.m. in its 1741 on the Terrace restaurant.<\/p>\n<p>Executive Chef Michael Adams and Chef de Cuisine David Troxell have created a menu pairing an autumn four-course dinner with seasonal meads from the Colony Meadery.<\/p>\n<p>\u00b7       Puree of chestnut soup with maitake mushrooms and white truffle cream<\/p>\n<p>\u00b7       Liberty Gardens\u2019 Herbalicious greens with local apple and Vermont blue &#038; apple cider vinaigrette<\/p>\n<p>\u00b7       Roasted duck breast with vanilla bean butternut puree, kohlrabi, crispy lotus root<\/p>\n<p>\u00b7       Pear butter pain perdu with hazelnut brittle<\/p>\n<p> \u201cAs someone who has enjoyed mead for many years, I\u2019m happy for its current resurgence, and am excited to have a meadery in the Lehigh Valley,\u201d said Adams. \u201cPartnering with Colony Meadery has challenged our hotel\u2019s culinary team to create unique pairings with their high-quality mead, and will allow us to expose our guests to this delightful beverage.\u201d<\/p>\n<p>Mead is made from fermenting honey and is one of the oldest beverages in human history. There are different ways of making and flavoring mead, from sweet to bone-dry, and from thick to crisp. The Colony Meadery uses experimental batches, modern methodology, and precise control of fermentation to create meads that are distinct and varied. Co-Founder and CEO, Greg Heller-Labelle, from the Meadery will be there to discuss each mead and its pairing with each course. <a href=\"http:\/\/thecolonymeadery.com\">http:\/\/thecolonymeadery.com<\/a><\/p>\n<p> &#8220;We are thrilled to have our first mead dinner with a chef of Michael Adams\u2019 caliber and reputation\u201d said Heller-Labelle. \u201cAs a new entrant to the Lehigh Valley&#8217;s craft food and beverage scene, we&#8217;re honored to be working with a place as storied and beloved as the Historic Hotel Bethlehem.
