Last weekend I was in Harrisburg, PA for the Horse World Expo and to explore some of the city with friends. While out exploring, I discovered a cool little coffee shop called Little Amp Coffeehouse, perfect little nook on the corner of State & 2nd<\/sup> Sts. I continued around taking in views of the Susquehanna River, some really old cool mansions, learned of a ballfield on this island that is the home to the Harrisburg Senators (may have to take in a game this year).<\/p>\n

Being a cook & foodie, I always like to check out local farmers markets and I ended my trip by stopping at the Broad Street Market. Lots of aromas filled the air as we walked around. I was getting hungry fast! Besides food vendors, I was looking for a veggie stand and I came across one in the 2nd<\/sup> building. Older couple was selling some fresh greens, fruits and other vegetables. As I paid my bill I noticed some not so desirable potatoes sitting behind the counter. I inquired about them and as you can see they were sprouting, haha. Normally these would be used for \u201cseed potatoes\u201d for planting in the Spring. I offered him $5 for all of them, he graciously accepted and added a few red beets as well.<\/p>\n

Tuesday I got to work and cleaned everything up, cut into bite size pieces, added 1 sweet potato that I had on hand and tossed with olive oil, garlic powder, dried Italian herbs, salt and pepper. Roasted at 400deg for 35 minutes until fork tender. This made 6.5 pints of food, great as a side for upcoming dinners and for breakfasts with eggs.<\/p>\n

Whether food costs are high or low, engaging with local farmers, offering a few extra dollars, one can make sensational dishes from the simplest ingredients. These root veggies fed 7+ people; I\u2019d say job well done!<\/p>\n
