Under the Fork | Spotlight: Cauliflower

Cauliflower usually grows with one main stem that carries a large, rounded “head” made of tightly clustered, immature white or off-white flower buds called the “curd”.  Typically, only the “head” is eaten.

What can I say about this bulbous veggie head, haha. As a kid I was not a fan and was forced to eat as my parents had us try everything. Fast forward to adult life and I’ve been incorporating this veg into various dishes! I’ve been seeing it all over farmers markets and it’s inexpensive. Great meal stretcher served as a side dish, in soups, lightly steamed dressed with olive oil & vinegar, sliced thick and pan seared served with hummus. This past week I steamed for 4 minutes, drained/air dry and sauteed with garlic and oil to crisp up.
