Mushroom Monday: Button

Seems a lot of people shy away from mushrooms at times, not knowing how to cook and/or prepare. Button or White mushrooms are the simplest to work with and are basically in nearly every dish/salad bars, etc that calls for mushrooms.

Mushrooms along with potatoes, chicken, rice are blank canvases. Whatever you cook them with, like garlic, fresh herbs, onions, spices and more, the mushroom will take on those flavors….a flavor sponge if you think about it!

Did you know that Button Mushrooms are a source of Vitamin D? One of the few veggies that contain this. They also contain excellent levels of selenium, copper, phosphorus, zinc, and potassium.

Simple recipe:

1# Mushrooms, sliced or chopped

2T Olive Oil & 2 T Butter, melted together

3 cloves Garlic, chopped (or more depending on one’s taste)

1 med. Onion (sliced)

Salt & Pepper

Heat up olive oil and butter in medium saucepan. Add mushrooms, garlic, onions, salt and pepper, cover and let it cook down a bit. The mushroom and onions will release water/moisture which will create a nice broth. Don’t toss it away, strain and use in soups and sauces. Once this mixture comes together, taste and adjust seasonings.

Cool and use as a side, top cooked proteins, add with scrambled eggs, etc.

Notes:

Experiment with fresh herbs like thyme, rosemary, sage and other different veggies. Top with grated cheese too!
