Mid-week I browse the deli cases at the grocery store looking for deals on chicken, beef, and pork. Usually, you I can find a discount for a few bucks. The last 2 weeks I found sweet & traditional sausage links (6/$3.00), great deal! I’ve made this dish twice and used different ingredients each time and it came out very tasty. Combining ingredients I had on hand, I was able to make 5 lunches, which cost $2/pint of food. This dish id similar to Jambalaya & Risotto. Hope you give it a try and enjoy!
Sausage Veggie Rice Skillet
Olive oil
5 – 6 Sausage Links (choice)
3 – 4 cloves garlic, chopped/crushed
Handful of greens, chopped (I used bitter greens that were starting to turn)
Extra Veggie on hand (I added ½ zucchini I had & some mushrooms this time)
1 15oz can tomato soup (any variety works), plus 1+ can of water
1 C. white rice
Garnish: Chopped parsley & parmesan cheese
Sauté the sausage in olive oil until it is no longer pink. Add garlic, cook until fragrant. Add greens, mushrooms or other veggie of choice and cook down for a few minutes covered. Add tomato soup, water and stir to incorporate. Add rice, lower heat to simmer, stirring every 10 minutes. Mixture will thicken up. Garnish with parsley and parmesan cheese.

Chefs Tip: During the last few minutes of cooking time, I added some fresh pepper and ¼ C of parmesan cheese to add a little bite to the dish.
