Spring is right around the corner (we hope), which brings thoughts of Spring Fishing Season.

Trout & Panfish.

Panfish (Bluegill, Perch, Rock Bass) spawn in May and early June, that is when they are the most active.

My favorite fish to catch are panfish (bluegill, pumpkinseed, red ear).

I was taught at a young age how to catch, filet and cook these delicate tasty filets.

Below is a simple recipe that can be altered in many ways to your own liking and that I use throughout the year with freshwater & saltwater varieties.

 

Panko Crusted Panfish

1 pound filets, no bones

1 – 2 cups panko bread crumbs

1 T dried parsley

2 tsps. garlic powder

Few grinds of salt and pepper

Olive oil

Combine all dry ingredients in a shallow dish.

Add filets to crumb mixture, press and coat.

Add olive oil to sauté pan over medium heat.

Add coated filets, cook for 1 or 2 minutes per side.

Lay filets on paper towels to drain.

Serve as a sandwich or plate with a starch & veggies.
